chocolate pavlova with spiced pears and butterscotch sauce

I was flicking through the latest delicious magazine (April 2013 issue) and came across a beautiful three tiered pavlova torte that I just had to make. This is coming from someone who has never cooked a meringue before so it was a bit of a challenge! But I stepped up to the plate (literally) and whipped up an amazing pavlova last night with all the trimmings. Think layers of crunchy and chewy chocolate chip pavlova layered with a beautiful mascarpone cream, caramelised almonds, spiced pears and butterscotch sauce drizzled over the layers. (Just a note - probably not the best presentation I've ever done as I aborted the third layer of pavlova at the last minute realising that it was just too much for four people to eat and so ended up piling the remaining extras on the second layer.....)
