This is a recipe I made up one night with a bunch of left over ingredients in the fridge and it was so easy and yummy I have been making it for years ever since!
1 avocado (diced)
300ml thin cream
2 cloves garlic (chopped)
5 rashers of bacon (remove fat and rind - chopped)
2 cups cooked penne pasta

- Pan fry the bacon on high heat until crispy and move to the side of the pan.
- Turn down to medium heat and add the garlic for one minute,
- Then add the sun dried tomatoes and fry for two minutes.
- Add the cream and simmer for approx 5-10 mins on medium heat until the cream thickens slightly but do not boil.
- Turn off heat and stir through avocado.
- Stir the source through the cooked pasta and serve.
